Christmas Stocking or Mitten Cake
What better way to honor Christmas than with a "mitten" fit for Santa himself or a unique stocking, just like the ones hanging on your mantel? We can't think of anything better than these festive symbols!
If you’re feeling a little adventurous this Christmas season, this holiday stocking or mitten cookie cakes are the perfect project for your baking bucket list. You can make them as simple or as ornate as you like, decorating it just as you would a homemade stocking or knit mitt!
A quick tip to keep in mind when baking your Italy and Michigan cookie cakes: this recipe is meant to fill half of your dish in height since it will rise (and could potentially bake over the edges if too full) so be cautious when doling out the dough. You will have some leftovers that can be rolled and baked as normal cookies.
For Italy, we also recommend filling only the main stocking portion with dough and baking, then adding a few small pieces of dough to finish the “toe and heel”. This prevents those small nooks and crannies from burning the cookie. For Michigan, we also recommend filling only the “mitten” with dough and using the upper portion for decorative candies, marshmallows, or sprinkles. Be careful and always use oven mitts when handling the hot dish!
Recipe for Christmas Mitten or Stocking Cookie Cake
Servings: 6
Prep Time: 40 min
Cook Time: 30 min.
Ingredients
- ¾ cup salted butter. softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 2 ¼ cups flour
- ½ teaspoon baking soda
- Red and White icing, to decorate
Instructions
- Preheat oven to 350 and spritz your dish with nonstick spray.
- In a stand mixer cream the butter and sugar just until combined. Add the vanilla extract and egg and mix well.
- Add in the flour and baking soda and mix just until a dough forms. Form the dough into a ball and wrap in plastic. Refrigerate for 30 minutes.
- When ready to bake, press the cookie dough into the dish, avoiding the small nooks and crannies. The dough should come about halfway up the sides of the dish because it will rise. Bake for 20-30 minutes or until the edges are golden and the center is set. You may cover the dish with foil for the final 10 minutes if the edges are browning too quickly.
- Once cool, frost with red icing, and using a star tip with a piping bag, decorate the mitten cuff with white icing.
