Mississippi Deviled Eggs

Deviled eggs may not have been invented in the South, but they are a staple for family gatherings and holidays. Throughout the region, you’ll find that everyone has their own special way of making and sharing this simple appetizer, whether it be the addition of a little spice or a signature sprinkling of smokey paprika for garnish.

To keep up with the tradition of the beloved classic deviled eggs, we’re sharing a simple recipe that can be altered to your taste and garnished with a few fun toppings. The base recipe can have a splash of hot sauce, a pinch of Cajun seasoning, or even a spoonful of sweet relish if that’s your thing.

Recipe for Mississippi Deviled Eggs

Servings: 6

Prep Time: 20 min

Cook Time: 10 min.

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt, plus more as needed
  • Freshly ground black pepper

Toppings to try so you can mix up that traditional flavor

  • paprika or smoked paprika
    • Doesn't change the structure but adds depth!
  • thin jalapeno slices
    • Not too spicy but just enough to notice and wake up the flavor
  • sun-dried tomato pesto
    • bring unexpected umami
  • sliced bacon
    • bacon and eggs will always go together, watch people try to stop snacking...
  • roasted asparagus tips with prosciutto
    • savory, spring veggies brighten while cured pork gives nutty contrast

 

Instructions

  1. Place the eggs in a medium saucepan and cover them completely with water. Bring to a boil over high heat, remove the pan, cover, and let sit for 10 minutes. Meanwhile, fill a large bowl with ice and water to create an ice bath.
  2. When the eggs are ready, move them to the prepared ice bath to chill. Once cool, gently crack the shells and peel. Slice each egg in half lengthwise and pop the yolks out into a small bowl. 
  3. Mash the yolks with the mayo, mustard, lemon juice, salt and pepper. Once smooth (a few lumps are okay) scoop some of the filling into each egg. Top with paprika and any other optional toppings! Mix and match different topping combinations or let guests top their own!
